Roasted Bell Pepper Pasta Salad.
Ingredients:
Rotini pasta (16oz)
Sliced Salami
Red Onions (1/4)
Mozzarella Pearls (1/2 Cup)
Cherry Tomatoes (1 Cup)
Parsley (2 Tbs)
Instructions:
Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
While the pasta is cooking, dice the salami, chop the red onion, and if using, halve the cherry tomatoes and dice the bell pepper.
In a large bowl, combine the cooled pasta, diced salami, red onion, mozzarella pearls, parsley, and any additional vegetables you’re using.
Pour the bell pepper vinaigrette over the salad and toss to combine. Adjust the amount of dressing to your preference.
Cover and refrigerate for at least 30 minutes before serving to let the flavors meld. Serve chilled or at room temperature.
Tips
You can add other ingredients like olives or spinach for extra flavor and nutrition.
This salad is great for meal prep and can last a few days in the fridge.
